It’s been a year now that we have been living off farm fresh eggs. A lot of trial and error on shelf life and seeing what works and what doesn’t. First and foremost lets talk about a farm-fresh egg vs store bought eggs. Here in the states we are one of the few countries that encourages washing and refrigerate eggs.
When a hen lays her body create a protective layer on the shell of the egg called the “bloom”. What the bloom does is that it protects the egg from any bacteria getting inside by sealing 6,000-8,000 shell pores. Unlike when you buy eggs at the store you get from a commercial farm and they spray their eggs with a chemical sanitizer before they package them. It is to help reduce the risk of salmonella or other bacterias. When an egg is washed the bloom is removed which leaves the egg pores open to new bacteria.
So what is the best way to store fresh farm eggs. I prefer unwashed and put in the fridge because they will last up to 6 months sometimes more. If you store them in the fridge washed in warm water they will last for about 1-2 months. If you decided to keep them on the counter unwashed they will last for about 3-4 weeks.
Other ways to store you eggs is by water glassing your eggs with will last for 9 months to a year.
